STEPS TO SETTING UP A GOURMET CHEESE CASE:

Step #1: See what you have to work with

Step #2: Clean the case

Step #3: Organize the case

Step #4: Reset the case / add slate to some areas / make a pretty waterfall!

Step #5: Try to sell off as much of the old stuff as possible, in order to make room for new and groovy (ie stinky, moldy, culturally interesting) cheeses

Step #6: Order A LOT of cheese...make your managers really nervous.

Step #7: stuff it with cheese! the front / the back / the waterfall

Step #8: buy a big cheese to go on top!

Step #9: Sample. Sample. Sample!

Step #10: Buy a "cheese cave" and stuff if full of moldy cheeses!
